- Cook the rice noodles according to the package instructions. Drain and set aside.
- In a small bowl, whisk together the fish sauce (or soy sauce), tamarind paste, brown sugar, rice vinegar, and red chili flakes to make the sauce. Set aside.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and cubed tofu, and stir-fry for a couple of minutes until the tofu starts to turn golden.
- Push the tofu to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through.
- Add the cooked noodles to the pan, followed by the sauce. Toss everything together to coat the noodles evenly with the sauce.
- Add the bean sprouts and chopped green onions to the pan. Stir-fry for another minute or two until the bean sprouts have slightly softened.
- Remove the pan from the heat and sprinkle the crushed peanuts over the top.
- Serve the Pad Thai hot with lime wedges on the side for squeezing over the noodles.
